For the background change: the time and weekday images are negatives (black image, the text is transparent) so you see the background behind them. On touching the shortcut area the background is simply replaced with another image.
The brightness shortcut is just changing the watch settings:

In other countries month is after day, so some times is confusing dates like 06/05 could be 5 jun or 6 may
