Open the watchface menu and tap on each shortcut to change it within these options: alarm, blood oxygen, compass, DnD, flashlight, map, music, phone, readiness, sleep, stopwatch, timer (You get a popup showing the current shortcut for each button, tap on confirm button as usual to set the choosen shortcut)
