I just got this watch and I’m loving it so far. Pretty easy to use and figure out. One thing I can’t figure out is how to delete the watchface I installed using the AnazFaces app. I can delete it from the app itself, but how do I do it on the watch? When I press and hold the watch face ...

This is my suggestion for the watch face. I think this code is much simpler. The only limitation is that the data is updated only when the screen is switched on. But I don't think that's a problem.

One more clarification. I am not sure about the correctness of the function for determining the day ...

Is it possible for T-Rex 3, that as I touch a specific part of the screen it switches in between showing the digital time and on a nother touch it shows the date and day? Unfortunately I couldn't do this yet. Can anyone help, please? :)

Yes, it is possible. You can activate and deactivate the visibility of individual elements at set times or during sunrise and sunset. But you would actually have to make two dials and turn one of them off under a tedious condition.
