Where I find command or option in watchface editor, that I can hide/unhide parameter (for example steps counting) on my watchface, until I press button?

As far as I know, Bip can't be scripted to hide specific elements.
The watch face that you have taken as an example is used to hide the screen using a black image when entering lock screen mode.

Amazfit models that are not based on the Zepp operating system cannot use editable elements, the Bip series models are one of them.

Except for Bip 5.
Amazfit Bip 5 uses zeppOS as the operating system.
Currently at version 2.1
